Comparing the characteristics of wines produced with a varying degree of respect for terroir

Abstract:

Tato diplomová práce se zabývá tématem „Porovnávání vlastností vína vyrobeného s různou mírou respektu k terroir“. Práce se konkrétně zaměřuje na zdůraznění terroir při technologickém zpracování a následném fermentační procesu v dané nádobě. Teoretická část přibližuje vlivy vinohradnického terroir, půdní a geologické faktory a vinařské terroir. Dále práce popisuje spontánní a řízenou fermentaci s využitím kalů během fermentace. Je zde popsána odrůda révy vinné Ryzlink rýnský, která byla použita v experimentální části. V úvodu praktické části jsou vysvětleny analytické metody, pomocí kterých byly zjištěny výsledky, což je demonstrováno v přiložených grafech a tabulkách. Praktická část srovnává tři různé použité technologie s následným zráním vína v odlišných nádobách. Nedílnou součástí experimentální části je senzorické hodnocení vyrobeného vína na základě stobodové hodnotící tabulky a aromatického profilu vína.

Abstract:

This thesis deals with the topic “Comparing the characteristics of wines produced with a varying degree of respect for terroir“. The theses focuses specifically on emphasizing the terroir during the technological processing and subsequent fermentation process in a vessel. The theoretical part describes the influences of vinicultural terroir, soil and geological factors and wine terroir. The thesis also explains both spontaneous and controlled fermentation with the use of sediments. “The Riesling“ wine variety, which was used in the experimental part, is also characterised here. Analytical methods, which were used to obtain results, are described in the introduction to the practical part, the results themselves can be found in the attached graphs and tables. The practical part of the theses compares three diverse technologies with subsequent maturing of the wine in different containers. An integral component of the experimental part is a sensory evaluation of the produced wine based on a hundred-point evaluation table and the wine´s aromatic profile.
