The inorganic substances in a potatoes in dependance of their kitchen processing

Abstract:

Tato práce je zaměřena na změny obsahu cizorodých látek v bramborách během jejich kuchyňských a technologických úprav. V první části práce se pojednává o výskytu cizorodých látek v potravinách (kontaminanty, potravinová aditiva, sekundárně vzniklé cizorodé látky) a jsou zde také uvedeny poznatky týkající se příjmu cizorodých látek rostlinami. Zde jsem se zabýval hlavně těžkými kovy (kadmium, nikl, arsen, berylium a dalšími). Protože tato práce je zaměřena na cizorodé látky v bramborách, tak jsem nezapomněl opomenout chemické a anatomické složení hlíz brambor. V závěrečné části práce jsem se věnoval vlivu technologického a kuchyňského zpracování brambor na cizorodé látky v nich obsažené. Zde jsem sledoval změny obsahů dusičnanů a glykoalkaloidů a také jsem zde zmínil barevné změny k nímž dochází během zpracování brambor.

Abstract:

This essay deals about the changes of a capacity of inorganic substances in a potatoes during their kitchen and technological modification. In the first part I deal about the occurence of the inorganic substances in a foodstufs (contaminates, food bonuses, secondarily acrued inorganic substaces) and about the knowledges which are concerning intake of the inorganic substances of a plants, too. Here I am mainly occupy about the heavy metals (cadmium, nickel, arsenic, beryllium atc). Because this essay is address for the inorganic substancies in a potatoes, I did not to forget omit the chemical and anatomy constitution of a tubers potatoes. In the final part of this essay I deal about the effect of the technological and kitchen processing of potatoes on the inorganic substances which are contain in them . The essay watches changes of subject nitrates, glycoalkaloids and watches the colored alternations during processing a potatoes, too.
