V teoretické části této bakalářské práce byla popsána výroba vína ve všech jejích krocích, a také složení vinného moštu. Dále byly charakterizovány aminokyseliny a biogenní aminy, a byl popsán jejich význam v potravinách, především ve víně. Abstract:
In the theoretical part of this bachelor thesis, making of wine in all steps and composition of grape must were described. Amino acids and biogenic amines were characterized and their significance in food, especially in wine, were described. The practical part of this thesis was focused on laboratory methods of analysis of amino acids and biogenic amines. Measured values were compared with references …more
