Anthocyanin pigments in grapes and wines

Abstract:

Bakalářská práce pojednává o výskytu a vlastnostech anthokyanových barviv. Zabývá se stabilitou barvy, technologiemi výroby červených a růžových vín a charakterizuje změny v průběhu zrání a školení červených a růžových vín. Práce byla vypracována v letech 2020 a 2021 na Ústavu posklizňové technologie zahradnických produktů Zahradnické fakulty Mendelovy univerzity v Brně. Experimentální část zahrnuje stanovení monomerních anthokyanů v osmi vzorcích vín a určení barevných parametrů metodou CIELAB. Nejvyšší obsah monomerních anthokyanů 274 mg/l byl naměřen v červeném víně odrůdy Dornfelder. Naopak nejnižší hodnota 4 mg/l byla naměřena u růžového vína odrůdy Frankovka.

Abstract:

Bachelor thesis discusses of occurrence and properties of anthocyanin dyes. Deals with the color stability, technologies of red and rosé wines production and characterizes changes during maturation and clarifacation of red and rosé wines. Thesis was elaborated betwen years 2020 and 2021 at the Department of Post-Harvest Technology of Horticultural Products at the Faculty of Horticulture, Mendel University in Brno. The experimental part includes the determination of monomeric anthocyanins in eight wine samples and the assesment of color parameters by the CIELAB method. The highest content of monomeric anthocyanins 274 mg/l was measured in Dornfelder red wine. On the other hand the lowest value 4 mg/l was measured in rosé wine Frankovka.
