Determination of significant substances with antioxidant properties in table grape varieties

Abstract:

Stanovení množství významných antioxidantů ve stolních odrůdách révy vinné, posouzení odrůd s nejvyšším obsahem těchto látek Cílem této práce bylo stanovit a porovnat obsah a aktivitu antioxidačních látek v různých odrůdách révy vinné pěstovaných v České republice. V literární části se práce zabývá základní charakteristikou jednotlivých skupin fenolických látek, zaměřuje se také na vliv těchto látek na zdraví člověka. V experimentální části byly analyzovány následující parametry: celkový obsah fenolických látek, obsah katechinů, antiradikálová aktivita, redukční síla a množství antokyanů včetně optické hustoty v modrých odrůdách. Byl stanoven obsah jednotlivých fenolických látek se zaměřením na kaempferol, katechin a epikatechin, kyselinu gallovou, kyselinu kaftarovou a cis a trans resveratrol metodou vysokoúčinné kapalinové chromatografie s hmotnostní spektrometrií. Z výsledků je patrné, že se jednotlivé odrůdy velmi liší obsahem fenolických látek a v antiradikálové aktivitě. Některé, zejména modré odrůdy, vykazovaly silné antioxidační a antiradikálové účinky.

Abstract:

Determination of the amount of important antioxidants in table grape varieties, assessment of the varieties with the highest content of these substances The aim of this work was to determine and compare the content and activity of antioxidant substances in different grape varieties grown in the Czech Republic. In the literary part, the work deals with the basic characteristics of individual groups of phenolic substances, it also focuses on the effect of these substances on human health. In the experimental part, the following parameters were analyzed: total content of phenolic substances, content of catechins, antiradical activity, reducing power and amount of anthocyanins, including optical density in blue varieties. The content of individual phenolic substances was determined with a focus on kaempferol, catechin and epicatechin, gallic acid, caftaric acid and cis and trans resveratrol by the method of high-performance liquid chromatography with mass spektrometry. The results show that the individual varieties differ greatly in the content of phenolic substances and in antiradical activity. Some, especially the blue varieties, showed strong antioxidant and antiradical effects.
