Sustainability management in a café

Abstract:

Tato práce se zaměřuje na management udržitelnosti v kavárenství. Cílem je vypracovat doporučení pro zlepšení managementu udržitelnosti v kavárnách v Praze. Metodou je přehled literatury a dvojitá deskriptivní case study: 1. Kavárny Deli Bluem ve Vídni, která dosáhla druhého nejvyššího hodnocení udržitelnosti podle metodiky Treeday, 2. Vybrané kavárny, kterou skupina expertů vyhodnotí jako nejvíce udržitelnou kavárnu v Praze. K vypracování doporučení dojdeme srovnávací analýzou případových studií a zapojením poznatků z přehledu literatury.

Abstract:

This thesis is focused on sustainability management in cafés. Its aim is to formulate recommendations for improvements of the sustainability management in cafés in Prague. The recommendations will be based on the literature review and on a descriptive case study of two cafés: 1. The first is the café Deli Bluem in Vienna, which reached the second highest number of points in the sustainability ranking according to the methodology of Treeday, 2. The second café will be selected by a group of experts, as the most sustainable café in Prague. The formulation of the recommendations will be based on the results of the comparative analysis of these case studies and by incorporation of the knowledge gained from the literature review.
