Abstract:
Antibiotická rezistence je přetrvávajícím problémem, ohrožujícím zejména lidské zdraví. Přenos potravinami je jedním z možných způsobů, jak se může rezistence šířit. Jedny z významných bakterií v potravinářském průmyslu jsou bakterie rodu Enterococcus. Jsou využívány pro výrobu fermentovaných potravin živočišného i rostlinného původu. Antibiotic resistance is rising global problem endandering human health. Antibiotic resistance is globally spreading and food safety and hygiene are significant mechanisms. The genus Enterococcus contains bacterial species associated with food industry. The enterococci are used for production of fermented food of animal and plant origin.
