The Composition of Antioxidants and Antioxidant Activity of Cider
Abstract:
Tato bakalářská práce se zabývá ciderem, jeho výrobou, chemickým složením a antioxidační aktivitou. Zaměřuje se na charakteristiku přírodních antioxidantů (vitamín C a E, karotenoidy, fenolické kyseliny, flavonoidy, a další). V této práci jsou popsány metody stanovení antioxidační aktivity cideru (DPPH, FRAP) a obsah jednotlivých antioxidantů v tomto nápoji.
Abstract:
This bachelor thesis deals with cider, his production, the chemical composition and the antioxidant activity. It focuses on the characteristics of the natural antioxidants (vitamin C and E, carotenoids, phenolic acids, flavonoids, and others).
