Výskyt kančího pachu negativně ovlivňuje kvalitu masa a je výrazný i po tepelné úpravě. Je způsoben především vysokou koncentrací androstenonu, indolu a skatolu v tuku zvířat. Tato bakalářská práce pojednává o problematice kančího pachu u nekastrovaných samců a o jeho vlivu na kvalitu masa. Abstract:
The presence of boar taint has a negative impact on the meat quality and it is prominent even after the cooking. It is caused mainly by the high concentration of phero-mones androstenone, indole and skatole present in fat tissues of animals.
