Proposal of a Communication Campaign Influencing Students' Consumer Behavior in School Catering Facilities Towards Food Waste Reduction

Abstract:

Tato bakalářská práce se zabývá plýtváním potravin ve školních jídelnách. Cílem bakalářské práce je navrhnout komunikační kampaň zaměřující se především na žáky povinné školní docházky a jejich spotřební chování ve školních jídelnách vedoucí ke snížení množství potravinového odpadu. K jeho dosažení využívá dotazníkové šetření, diskuse se žáky a také hloubkové rozhovory s vedoucími školních jídelen. První kapitola práce se zabývá obecnou problematikou plýtvání potravinami a jeho dopady. Druhá kapitola se zaměřuje na školní jídelny, včetně legislativního rámce a možností prevence. Třetí pak popisuje prvky osvětové komunikační kampaně, spolu s konkrétními příklady již existujících projektů. Teoretická část práce mimo jiné také popisuje zahraniční přístupy prevence dané problematiky. Čtvrtá kapitola prezentuje výsledky dotazníkového šetření a rozhovorů. Poslední kapitola obsahuje návrh komunikační kampaně s důrazem na praktické aspekty, jako jsou exkurze do jídelen a aktivní zapojení žáků, stejně jako oslovení jejich rodičů.

Abstract:

This bachelor thesis describes the issue of food waste in school canteens. The aim of the bachelor thesis is to propose a communication campaign focusing primarily on compulsory school attendees and their consumption behavior in school canteens leading to a reduction in the amount of food waste. To achieve this, it utilizes questionnaire surveys and discussions with students as well as in-depth interviews with school canteen managers. The first chapter of the thesis addresses the general issue of food waste and its impacts. The second one focuses on school canteens, including the legislative framework and prevention possibilities. The third chapter describes characteristics of educational communication campaigns, providing concrete examples of existing ones. The first three chapters include, among other topics, methods utilized by foreign entities to prevent the given issue. The fourth chapter presents the results of the questionnaire surveys and interviews. The last chapter proposes a communication campaign with an emphasis on practical aspects, such as excursions to canteens and active involvement of students, as well as reaching out to their parents.
