Possibilities of Beverage Filtration

Abstract:

Bakalářská práce „Možnosti filtrace nápojů“ pojednává o různých způsobech filtrace, druhů filtrů a materiálů. V první řadě probírám základní principy homogenizace a filtrace nápojů. Následují podrobně vysvětlené deskové filtry, křemelinové filtry, membránové filtry, vakuově rotační filtry, cross-flow filtry, kalolisy a používané materiály. V práci jsou popsány výhody a nevýhody těchto typů a jaká je cenová relace. Praktická část práce je zaměřena na porovnání papírových filtračních materiálů a jejich délku perzistence. Srovnávají se dva produkty filtračních deskových vložek BECOPAD a HOBRAFILT v oblasti množství vůní a chuti „papírovosti“ a jejich dozvuk a klesající změnu perzistence během zrání vína v období 10 týdnů.

Abstract:

The bachelor thesis "Possibilities of Beverage Filtration" discusses various methods of filtration, types of filters, and materials. It starts by covering the basic principles of homogenization and beverage filtration. This is followed by detailed explanations of plate filters, diatomaceous earth filters, membrane filters, vacuum rotary filters, cross-flow filters, kalolysis, and the materials used. The advantages and disadvantages of these types are analyzed, along with their price relationships. The practical part of the thesis, the focus is on comparing paper filtration materials and their persistence length. Two products of filtration plate inserts, BECOPAD and HOBRAFILT are compared in terms of the amount of "paperiness" in aroma and taste, their aftertaste, and the decreasing change in persistence during the aging of wine over a period of 10 weeks.
