Possibilities of canning processing of quinces

Abstract:

Diplomová práce na téma Možnosti konzervárenského zpracování kdoulí v literární část poskytuje informace o historii, taxonomické a anatomické charakteristice kdoulí, nárocích na prostředí a pěstování, sklizeň a skladování plodů a neposledně možnosti využití kdoulí. V praktické části bylo v čerstvém stavu vyhodnoceno 5 odrůd kdoulí: Cydopon, Hemus, Limon ayvasi, Ingenheimer bonbenquitte a Triumph 1. Byly vyrobeny 4 varianty výrobků s rozdílnou konzistencí – kompoty, ovocné pomazánky, šťávy a kdoulový sýr. Výrobky byly senzoricky a výsledky statisticky vyhodnoceny.

Abstract:

The diploma thesis on the topic of possibilities of canning processing of quinces in the literary part provides information about the history, taxonomic and anatomical characteristics of quinces, demands on the environment and cultivation, harvesting and storage of fruits and last but not least the possibilities of using quinces. In the practical part, 5 varieties of quince were evaluated fresh: Cydopon, Hemus, Limon ayvasi, Ingenheimer bonbenquitte and Triumph 1. 4 variants of products with different consistency were produced – compotes, fruit spreads, juices and quince cheese. The products were sensory and the results statistically evaluated.
