Abstract:
Ochratoxin A je mykotoxin produkovaný druhy rodu Penicillium a Aspergillus. Jedná se o mykotoxin, který byl nalezen v celé řadě potravin a který představuje pro člověka závažné zdravotní riziko. Byly popsány jeho nefrotoxické, imunosupresivní, teratogenní a karcinogenní vlastnosti. Ochratoxin A se váže na bílkoviny krevní plazmy, což přispívá k jeho dlouhému biologickému poločasu. Abstract:
Ochratoxin A is a mycotoxin produced by certain Penicillium and Aspergillus species. The mycotoxin has been detected in a variety of food items and poses a serious health risk to humans. It shows nephrotoxic, immunosuppresive, teratogenic and carcinogenic properties. Binding of the mycotoxin in the blood to the albumin fraction contributes to its long half-life in a human body.
