Production technology of carbonated fruit wine
Abstract:
Literární část práce je zaměřena na postup výroby jablečných vín od sklizně až po vznik šumivého vína, jsou v ní popsány také důležité obsahové látky a je v ní zpracován přehled jakostních požadavků na ovocná vína podle legislativy. Abstract:
In the practical part of the thesis was made sparkling apple wine from Golden Delicious and Jonagold variety and after that the wine was fortificated with herbal extracts. There were 6 variants of flavoured sparkling wine. The beverages were evaluated for their antioxidant content and compared with 3 commercial beverages of similar type using FRAP and DPPH methods, and the Folin - Ciocalteu method …more
