Listeria monocytogenes as a significant alimentary pathogen

Abstract:

Tato bakalářská práce se zabývá bakterií Listeria monocytogenes, která je významným alimentárním patogenem. Cílem literární rešerše je shrnutí současných poznatků o bakterii Listeria monocytogenes, včetně její morfologie, kultivace, výskytu v potravinách a potravinářském průmyslu. Dále přehledně shrnuje metody pro detekci přítomnosti této bakterie v potravinách a prostředí založené na kultivačních technikách, biochemických testech, imunologických principech a molekulárních principech. Detekční metody jsou naprosto klíčové pro ochranu veřejného zdraví. V druhé části práce obsahuje informace o alimentárním onemocnění způsobeném bakterií Listeria monocytogenes, známé jako listerióza. Jsou zde shrnuty všechny klinické projevy listeriózy, včetně gastroenteritidy, bakteriémie a infekce CNS a placenty. Zmíněný je také invazivní průběh onemocnění a patogeneze bakterie. Práce zahrnuje veškerá významná rizika především pro ohrožené skupiny lidské populace. V další části práce jsou diskutovány možnosti prevence, které hrají důležitou roli v incidenci onemocnění. Případná léčba listeriózy spočívá obvykle v antibiotické terapii. Závěrem je shrnut epidemiologický význam této bakterie.

Abstract:

This bachelor thesis addresses Listeria monocytogenes, a significant alimentary pathogen. The aim of the literature review is to summarize current knowledge about Listeria monocytogenes, including its morphology, cultivation, occurrence in foods and the food industry. Furthermore, it provides a comprehensive overview of methods for detecting the presence of this bacteria in foods and the environment, based on cultivation techniques, biochemical tests, immunological principles and molecular principles. Detection methods are crucial for public health protection. The second part of the thesis contains information about alimentary diseases caused by Listeria monocytogenes, known as listeriosis. It summarizes all clinical manifestations of listeriosis, including gastroenteritis, bacteremia and infections of the central nervous system and placenta. The invasive course of the disease and the bacteria's pathogenesis are also mentioned. The thesis discusses all significant risks, especially for vulnerable groups of the population. The possibilities of prevention, which play an important role in the incidence of the disease, are further discussed. Treatment of listeriosis usually involves antibiotic therapy. The epidemiological importance of this bacteria is finally summarized.
