Effect of different white wine technology on sulfur dioxide content

Abstract:

Bakalářská práce se zabývá problematikou využití oxidu siřičitého při výrobě vína, množství jeho použití při různé technologii výroby a porovnání jeho naměřených hodnot u výsledných variant vín. V literárním přehledu se čtenář dozví o základech technologie výroby bílých vín a vlastnostech, rozdělení a účinku oxidu siřičitého. Součástí práce je experimentální pokus, jehož základem je využití jednoho vstupního materiálu (hroznů odrůdy Chradonnay) na kterém bylo demonstrováno, jaká je možnost technologie výroby a postupů výroby k docílení dvou odlišných vín, a to zejména z hlediska použití oxidu siřičitého. Varianta A byla vyrobena metodou Sur lie se zráním v dubovém sudu a Varianta B byla vyrobena reduktivní technologií se zastavením kvašení a ponechání zbytkového cukru. Výsledným porovnáním obou variant bylo zjištěno, že při technologii metodou Sur lie bylo ve výsledném víně použito výrazně méně oxidu siřičitého oproti Variantě B.

Abstract:

The bachelor's thesis deals with the issue of the use of sulfur dioxide in the production of wine, the amount of its use in different production technologies and its comparison of measured values for the resulting wine variants. In the literature review, the reader learns about the basics of white wine production technology and the properties, distribution and effect of sulfur dioxide. Part of the work is an experimental experiment, the basis of which is the use of one input material (grapes of the Chradonnay variety), which demonstrated the possibility of production technology and production procedures to achieve two different wines, especially from the point of view of the use of sulfur dioxide. Variant A was produced by the Sur lie method with aging in an oak barrel, and variant B was produced by reductive technology, stopping fermentation and leaving residual sugar. The resulting comparison of both variants revealed that significantly less sulfur dioxide was used in the resulting wine with Sur lie technology compared to variant B.
