Aromatic compounds in red wines

Abstract:

Tato bakalářská práce je zaměřena na aromatické látky v červených vínech. Literární část obsahuje tři hlavní kapitoly, kdy první pojednává o technologii výroby červených vín a popisuje vybrané kroky, na ní navazuje kapitola obecně rozdělující buket vína a jednotlivé skupiny aromatických látek vyskytujících se v červených vínech. Poslední část literárního přehledu představuje analytické metody používané k detekci těchto látek. V experimentální části práce jsou hodnoceny výsledky zastoupení vybraných aromatických látek vsuchých červených vínech analyzovaných pomocí plynové chromatografie ve spojení s hmotnostní spektrometrií.

Abstract:

This bachelor thesis focuses on the aromatic compounds in red wines. The literature review consists of three major chapters. The first one deals with red wine technology and describes the selected steps. The following chapter generally classifies the wine bouquet and categorizes the different groups of aromatic compounds occurring in red wine. The last part of the literature review presents the analytical methods used for the detection of aromatic compounds. In the experimental part of the thesis, the results of the abundance of selected aromatics in dry red wines analyzed using gas chromatography coupled with mass spectrometry are evaluated.
