Abstract:

Tato bakalářská práce se zabývá problematikou provozu rodinné restaurace během pandemického období, které silně poznamenalo většinu podnikatelů v gastronomii. V teoretické části bude provedena literární rešerše živností, obchodních společností, rodinného podnikání v období pandemie COVID-19. V praktické části je popsána samotná transformace právní formy, ke které má dojít dle zjištění v této bakalářské práce v nadcházejících dvou letech. Tento krok majitel restaurace provede z několika důvodů, a to především kvůli dědictví a přenechání svého podnikání vlastním potomkům, ke zvýšení věrohodnosti svého podnikání a kvůli snížení rizikům, které plynnou z podnikání fyzických osob. Majitel podniká prostřednictvím OSVČ a ručí tedy celým svým majetkem za celý podnik, a proto své podnikání transformuje na společnost s ručením omezeným, aby ručil do výše svého nesplaceného vkladu. Součástí praktické části je také analýza a vyhodnocení stávajících procesů v tomto podniku včetně SWOT analýzy, kterou jsem použil jako nástroj k zjištění skutečností uvnitř podniku. Na SWOT analýzu navazuje výzkum v podobě dotazníkové šetření, které vyplňovali hosté restaurace. Otázky v dotazníku se vztahují především k pandemii COVID-19. Závěrečná kapitola praktické části se poté věnuje návrhům a doporučením k managementu restaurace.

Abstract:

This bachelor's thesis deals with the issue of running a family restaurant during a pandemic period that has severely affected most entrepreneurs in the catering industry. In the theoretical part, a literature search of trades, companies, family business during the pandemic period of COVID-19 will be conducted. In the practical part, the actual transformation of the legal form is described, which according to the findings in this bachelor thesis is expected to take place in the next two years. This step will be taken by the restaurant owner for several reasons and mainly to inherit and pass on his business to his own descendants, to increase the credibility of his business and to reduce the risks that flow from the business of individuals. The owner runs the business through a sole trader and is therefore liable for the whole of the business with all his assets, and therefore converts his business into a limited company to guarantee up to the amount of his outstanding deposit. The practical part also includes an analysis and evaluation of the current processes in this business including a SWOT analysis which I have used as a tool to establish the facts within the business. The SWOT analysis is followed by a survey in the form of a questionnaire filled out by the restaurant's guests. The questions in the questionnaire are mainly related to the COVID-19 pandemic. The final chapter of the practical part then deals with suggestions and recommendations for the management of the restaurant.
