Analysis of differences in eating habbits of Thai and Czech cusine

Abstract:

Bakalářská práce analyzuje rozdíly ve stravovacích zvyklostech dvou rozdílných kuchyní a kultur obecně – české kuchyně a thajské kuchyně. Obě kuchyně jsou vysoce specifické a nabízejí velké množství kulinářských variant na běžný i sváteční den. Také kultura stolování je zajímavým tématem, který je v rámci předkládané práce rozvíjeno. Praktická část práce, za pomoci zvolené metody výzkumu, podává přehled o rozdílnosti obou komparovaných kuchyní. Zvolený výzkum taktéž ukazuje preference strávníků z hlediska rychlosti přípravy požadovaných pokrmů a výživových hodnot. Cílovou skupinou se v rámci analytické části práce stávají návštěvníci českých a thajských restaurací, zařízení obdobného typu, či kuchaři-amatéři. Tato cílová skupina je oslovena prostřednictvím webového portálu Survio.com, a je volena tak, aby podala relevantní přehled o preferencích českých poživatelů v oblasti gastronomie. Respondentům je kladeno celkem sedm otázek, které se týkají komparace české a thajské gastronomie a jejich názoru na přípravu pokrmů, jejich časové náročnosti a vnímání diferencí mezi českou a thajskou kuchyní. Pro vyhodnocení byla použita tabulková a grafová metoda, doplněná o slovní zhodnocení. Nejzávažnější zjištění, jako časová náročnost přípravy pokrmů, rozdílné využití lokálních surovin, rozdílný obsah tuku v hotových pokrmech, pikantnost nebo také větší důraz kladený na masné pokrmy spočívající v malých empirických zkušenostech, získaných z dotazníkového šetření, jsou využita jako výchozí bod pro tvorbu návrhů, námětů a doporučení. Obsahem návrhové části jsou doporučení týkající se rozšíření podvědomí o thajské kuchyni a rozšíření thajské kuchyně do českých domácností. Cílem bakalářské práce je analyzovat rozdíly mezi českou a thajskou kuchyní.

Abstract:

Bachelor thesis analyzes differences in the eating habits of two different culinary and culinary cultures at all - Czech cuisine and Thai cuisine. Both kitchens are highly specific and they offer many culinary variants during the common and during the festive day Also, dining culture is an interesting topic that is being developed in the present work. The analytical part of the thesis using the chosen method of research, gives a comprehensive overview of the differences between the two comparisons. The selected research also shows the preferences of the boarders in terms of the speed of preparation of the required meals and nutritional values. The target group within the empirical part of the work are visitors of Czech and Thai restaurants, facilities of a similar type, or chefs - amateurs. This target group is addressed through a web portal Survio.com and is chosen to provide a relevant overview of the preferences of Czech gastronomy users. Respondents are asked a total of seven questions concerning the comparison of Czech and Thai gastronomy and their opinion on food preparation, their time consuming and perceptions of the differences between Czech and Thai cuisine. The most important findings, such as time relevance preparing of meals, different using of local ingredients, different fats content in each ready-made meals, spiciness, or higher preference of dishes contain meat have been taken from questionnaire survey and lately displayed on final conclusion. The suggestion part is mainly compounded from recommendations how to build awareness about Thai cuisine in general. Secondly, the suggestions part is defined how to get Thai cuisine into Czech households. The purpose of bachelor thesis is analysed differences between Czech and Thai cuisine.
