Evolution of Professional Gastronomic Education in the Czech Republic after the Year 2000

Abstract:

Bakalářská práce se zaměřuje na vývoj odborného gastronomického vzdělání v České republice v oboru 65 - gastronomie, hotelnictví a turismus. Cílem práce je zhodnotit vývoj počtu žáků v oboru 65 - gastronomie, hotelnictví, turismus v Česku a s pomocí řízených rozhovorů zhodnotit, jak se střední školy zapojují do projektů na podporu gastronomie. V práci je objasněn vzdělávací systém České republiky, který je upraven mezinárodní klasifikací vzdělání ISCED a Evropským rámcem kvalifikací. Také rámcový vzdělávací program a školní vzdělávací program, odborné vzdělání a gastronomické odborné vzdělání a jaké dovednosti si žák osvojí dle rámcového vzdělávacího programu. Analytická část se zaměřuje na vývoj gastronomického vzdělání, na gastronomické organizace a projekty, které v České republice popularizuji obor gastronomie a řeší témata gastronomie. Na základě dat Statistického informačního systému Ministerstva školství, mládeže a tělovýchovy bylo zjištěno, že nejslabším rokem nastupujících žáků na odborné gastronomické školy s výučním listem a s maturitní zkouškou byl rok 2005/2006. Naopak nejvyšší nárůst žáků, nastupujících do 1. ročníků na gastronomické školy s výučním listem, byl rok 2007/2008 a s maturitní zkouškou rok 2006/2007. Na základě řízených rozhovorů s řediteli odborných gastronomických škol bylo zjištěno, jakou mají využitelnost gastronomické projekty na odborných gastronomických školách. Využitelnost gastronomických projektů je vysoká. K nejvyužívanějším patří Asociace kuchařů a cukrářů a Asociace hotelů a restaurací.

Abstract:

The bachelor thesis focuses on the development of professional gastronomic education in the Czech Republic in the field of 65 - gastronomy, hotel management and tourism. The aim of the thesis is to evaluate the development of the number of students in the field of 65 - gastronomy, hotel management, tourism in the Czech Republic and to evaluate, with the use of the method of guided interviews, how secondary schools are involved in projects to promote gastronomy. The thesis explains the educational system of the Czech Republic, which is based on the International Classification of Education ISCED and the European Qualifications Framework. Also, the framework curriculum and the school curriculum, vocational education and gastronomic vocational education and what skills the pupil will acquire according to the framework curriculum are described as well. The analytical part focuses on the development of gastronomic education, gastronomic organisations and projects that popularise the field of gastronomy in the Czech Republic and address gastronomic topics. On the basis of data from the Statistical Information System of the Ministry of Education, Youth and Sports, it was found that the weakest year of enrolment of pupils into vocational gastronomy schools with a school-leaving certificate and a school-leaving examination was the school year 2005/2006. On the other hand, the highest increase in the number of students entering the first year of gastronomic schools with a certification was in 2007/2008 and in 2006/2007 with a baccalaureate. Guided interviews with directors of vocational gastronomy schools revealed the usefulness of gastronomy projects in vocational gastronomy schools. The usefullness of gastronomy projects was rated as high. Among these the most used were the Association of Chefs and Pastry Chefs and the Association of Hotels and Restaurants.
