Suggestion for the Installation of Business Continuity Management in the Proces of Food Production

Abstract:

Diplomová práce se zabývá problematikou řízení rizik a Business Continuity Managementem v procesu potravinářské výroby. V teoretické části jsou popsány základní pojmy týkající se rizik a jejich řízení. Dále je definován systém Business Continuity Managementu, který řeší proces aplikace do organizace a normy vztahující se k tomuto systému a jeho řízení. Poslední fází teoretické části je popis potravinářského průmyslu v ČR, vývoj ekonomiky v závislosti na výrobě potravin - tedy jak tento sektor ovlivňuje zaměstnanost, HDP a ceny. V souvislosti s potravinářským průmyslem je také řešena bezpečnost potravin, standardy řízení rizik a bezpečnosti a legislativa spojená s potravinářstvím. Praktická část je rozdělená na analyticko-empirickou a aplikační sekci. V analyticko-empirické části je představena firma a následně je definován vybraný výrobní proces ve vztahu k analýze risk managementu. Dále je zmíněn systém HACCP, jakožto základní legislativní pilíř analýzy rizik pro potravinářské podniky. V aplikační části je vypracován návrh zavedení Business Continuity Managementu. V rámci BCM je navržen plán kontinuity činností. V závěru práce je vyhodnocení navrženého plánu z hlediska řízení rizik.

Abstract:

The diploma thesis deals with Risk Management and Business Continuity Management issues in the process of food production. In the theoretical part are described basic concepts related to risks and their management. Further, a definition of Business Continuity Management system explains the application process to the organization and the standards associated with this system and its management. The last phase of the theoretical part summarises the food industry in the Czech Republic, the development of the economy depending on food production, and how this sector affects employment, GDP and prices. There are adressed food safety, risk and safety management standards and food-related legislation in connection with the food industry. The practical part includes the analytical-empirical and application section. The analytical-empirical section introduces the company and defines the selected production process in relation to the risk management analysis. Then there is described the HACCP system as a fundamental legislative pillar of risk analysis for food businesses. The application section contains a proposal to implement Business Continuity Management. As the part of BCM is suggested a business continuity plan. The work is closed with the evaluation of the proposed plan in terms of risk management.
