Evaluation of the Quality of Catering Services in Trains in the Czech Republic and the Slovak Republic

Abstract:

The diploma thesis "Evaluation of the Quality of Catering Services in Trains in the Czech Republic and the Slovak Republic" deals with the quality of catering services provided in trains in the given territories. The aim of the thesis is to evaluate the quality of catering services provided in the trains of four selected companies and thus offer an answer to a pre-selected research question. The first part of the thesis deals with the definition of terms from the field of tourism, gastronomy and quality management. The theoretical part also contains an explanation of various concepts related to the topic of the work. The second part, in addition to the application of the acquired knowledge from the theoretical part of the work, deals with qualitative and quantitative research. For the purposes of the work, observation rides were carried out in the trains of all four companies. Qualitative research consists of descriptions of selected companies, their evaluation based on selected criteria and comparisons between them. Quantitative research consists of a questionnaire survey, which was intended for ordinary travelers who have experience with individual companies. In the proposal part, there are available solutions to the shortcomings of the companies, which resulted from qualitative and quantitative research.

Abstract:

Diplomová práca "Zhodnotenie kvality stravovacích služieb vo vlakoch na území Českej republiky a Slovenskej republiky" sa zaoberá kvalitou stravovacích služieb, ktorá je poskytovaná na palubách vlakov na daných územiach. Cieľom diplomovej práce je zhodnotiť kvalitu poskytovaných stravovacích služieb na palubách vlakov štyroch vybraných spoločností, a tým ponúknuť odpoveď na predom zvolenú výskumnú otázku. Prvá časť práce sa zapodieva vymedzením pojmov z oblasti cestovného ruchu, gastronómie a managementu riadenia kvality. V teoretickej časti je tiež podaný výklad k rôznym pojmom, ktoré sú spojené s témou práce. Druhá časť, okrem toho, že aplikuje nadobudnuté znalosti z teoretickej časti práce, tak sa zaoberá kvalitatívnym a kvantitatívnym výskumom. Pre účely práce boli uskutočnené pozorovacie jazdy na palubách vlakov všetkých štyroch spoločností. Kvalitatívny výskum spočíva v deskripcií zvolených spoločností, ich ohodnotenia na základe zvolených kritérií a komparácia medzi nimi. Kvantitatívny výskum spočíva v dotazníkovom šetrení, ktoré bolo určené bežným cestujúcim, ktorí majú skúsenosti s jednotlivými spoločnosťami. V návrhovej časti sú k dispozícií riešenia na nedostatky spoločností, ktoré vyplynuli z kvalitatívneho a kvantitatívneho výskumu.
