Enogastronomy in Champagne

Abstract:

DOSTÁLOVÁ, Anna. Enogastronomie v Champagni. *Bakalářská práce+ Vysoká škola hotelová. Praha: 2015 62 s. Bakalářská práce se zabývá enogastronomií v Champagni. Cílem práce je analyzovat nabídku degustačních menu, která jsou doplněna Champagne, ve francouzském regionu Champagne. Dalším krokem práce je porovnání nabídek restaurací stejné kategorie v Praze. Text se skládá ze tří částí: teoretické, analytické a návrhové. Teoretická část se zabývá popisem regionu Champagne, kde vzniká samotný produkt champagne a důraz je kladen na enogastronomii v tomto francouzském regionu. Analytická část zahrnuje dvě části. V první části byla využita metodika řízeného rozhovoru v osmi restauracích ve Francii a České republice. Druhá část navazuje na řízené rozhovory a využívá metodiku komparace k porovnání nabídky vybraných restaurací. Navrhovaná část vychází z výsledků analytické části. Výstupem bakalářské práce je doporučení pro restaurační provozy nabízející Champagne a rovněž návrhy, jak zlepšit povědomí veřejnosti o Champagne. Závěr rekapituluje celou bakalářskou práci a vyhodnocuje předem stanovené hypotézy.

DOSTÁLOVÁ, Anna. Enogastronomy in Champagne. [Bachaleros dissertation] The Institute of Hospitality Management. Prague: 2015, 62 p. The Bachelor thesis is focused on Enogastronomy in Champagne. The aim of thesis is to determine the offer of degustation menus, pairing with Champagne in French region Champagne and compare with the offer of same level restaurants in Prague. The thesis consists of three parts: theoretical, analytical and stating suggestions. Teoretical part describes the region Champagne, the product Champagne and enogastronomy. Analytical part consists of two parts. The first part used methodology interview in eight restaurants in France and Czech Republick. Second part follows first part and comparing offer in selected restaurants. The part stating is based on analytical part. It is started recommendations for restaurants offering Champagne and as well as suggestions how to improve public awareness of Champagne. Conclusion recapitulates the whole bachelor thesis and evaluates a predetermined hypothesis.
