Abstract:
Bakterie mléčného kvašení s probiotickými vlastnostmi produkují bílkovinné sloučeniny - bakteriociny s baktericidním účinkem. Pomocí metody DNA/DNA hybridizace byly u bakterií mléčného kvašení vyhledány vybrané geny; geny kódující nisin u bakterií Lactococcus lactis ssp. lactis a geny kódující laktacin F u bakterií rodu Lactobacillus sp. Lactic acid bacteria with probiotic activities produce proteinic substances - bacteriocins with bactericidal effects.
