Pages: 63 The present bachelor thesis analyzes the operation and development of Czech liqueurs and spirits as a basis for new cocktails used in gastronomy and hotel industry, especially in Prague cocktail bars. The object of the bachelor thesis is to research the activity of Czech spirits and liqueurs, as the basis of new cocktails in bar and restaurant facilities in the capital city of Czech Republic, Prague. In the theoretical part, which is in the first order, I will define and clarify the basic concepts of Czech spirits, liqueurs, cocktails and related things. In the analytical part is described methodology of practical research of analysis of new cocktails in Prague cocktail bars. In addition to the methodology, you will find precise instructions of my research from planning and preparation to the final phase of the analysis. The results of the analytical part, I conclude that Becherovka is used in 39% of all analyzed cocktails most often as a coctails basis. Another finding is, the use of the V-shape glass, as the most commonly used, for cocktails with a Czech basis. The last finding is that the highest average prize of St. Antoine Absinthe, which is 171,70 CZK. The average price of cocktails with Becherovka basis is 170.40 CZK. During the creation of the design part, I first of all appealed to the poorness, I had stumbled during the research concerning the basic Czech basis of cocktails and situation of employment market. In particular, there are the products that are the most common or most rarely used among mixing cocktails.

Počet strán: 63 Predložená bakalárska práca analyzuje pôsobenie a vývoj českých likérov a destilátov ako bázy v nových koktejloch, používaných v gastronómii a v hotelierstve, predovšetkým v pražských koktejlových barových zariadeniach. Cieľom bakalárskej práce je preskúmať pôsobenie českých destilátov a likérov, ako základné báze nových koktejlov v barových a reštauračných zariadeniach v hlavnom meste Praha. V teoretickej časti, ktorá je v poradí ako prvá, budem definovať a objasňovať základné pojmy týkajúce sa českých destilátov, likérov ale aj koktejlov a vecí súvisiacich s nimi. V analytickej časti je popísaná metodika praktického výskumu analýzy nových koktejloch v pražských koktejlových baroch. Okrem metodiky v nej nájdete aj presné inštrukcie môjho výskumu od plánovania a príprav, až po konečné fázy analýzy. Vo výsledkoch analytickej časti som dospel k záveru, že Becherovka je používaná z 39% zo všetkých analyzovaných koktejlov najčastejšie ako báza miešaných nápojov. Ďalším zistením je používanie V-shape pohára, ako najčastejšie využívaného, pre koktejly s českou bázou. Posledným zistením je, že najvyššia priemerná cena koktejlov s bázou St. Antoine Absinthe, a to 171,70 Kč. Priemerná cena koktejlov s bázou Becherovky je 170,40 Kč. Pri tvorbe návrhovej časti som predovšetkým apeloval na nedostatky, na ktoré som natrafil počas výskumu, týkajúce sa základných českých báz koktejlov a momentálnej situácie na trhu práce. Predovšetkým ide o produkty, ktoré sú najčastejšie či najzriedkavejšie používané pri miešaní koktejlov.
