Comparison of Eating Habits and Culture of Indonesian, Vietnamese and Thai Cuisine

Abstract:

Bakalářská práce je zaměřena na komparaci stravovacích zvyklostí a kultury v indonéské, vietnamské a thajské kuchyni. Hlavním cílem bakalářské práce je komparace celkové stravovací kultury Indonésie, Vietnamu a Thajska. Stanoven byl i cíl vedlejší, kterým je zjištění vztahu Čechů k asijské gastronomii a jejich preferencí. První část práce je věnována teoretickým informacím o sledovaných zemích, na které je odkazováno v průběhu celé bakalářské práce. Obsahuje jak základní geografické informace jako jsou poloha, podnebí či počet obyvatel, tak ty specifické, zaměřené především na gastronomii a vše, co ji ovlivňuje jako je napříkald celkový historický kontext, vliv náboženství nebo samotný výčet základních používaných surovin a způsobů přípravy jídla. Obsahem druhé části práce, analytické, je analýza rozhovorů s původními obyvateli sledovaných zemí, jejíž výsledné informace jsou dány do souvislosti s fakty z teoretické části a následně jsou jednotlivé kuchyně porovnány mezi sebou. Vzhledem k naplnění vedlejšího cíle obsahuje také analýzu dotazníkového šetření, které podává přehled o vztahu Čechů k asijské gastronomii a jejich preferencích. V analytické části jsou zodpovězeny stanovené výzkumné otázky a jsou tedy především odhaleny odlišnosti sledovaných národních kuchyní, kterými je například užívání specifických druhů koření či odlišný způsob konzumace a také je zjištěn vztah Čechů k asijské gastronomii, který se jeví jako velmi pozitivní. Poslední návrhová část bakalářské práce zahrnuje shrnutí těchto nejdůležitějších výsledků a jednotlivé návrhy, které by mohly být nápomocny většímu porozumění těmto odlišným kulturám.

Abstract:

The bachelor's dissertation is focused on the comparison of eating habits and culture in Indonesian, Vietnamese and Thai cuisine. The main goal of the bachelor's dissertation is to compare the overall food culture of Indonesia, Vietnam and Thailand. A secondary goal is to find out the relationship of Czechs to Asian gastronomy and their preferences. The first part of the thesis is devoted to the theoretical information about the monitored countries, which is referred to throughout the bachelor's dissertation. It contains basic geographical information such as location, climate or population, as well as specific ones, focused primarily on gastronomy and everything that affects it, such as the overall historical context, the influence of religion or the list of basic raw materials and methods of the food preparation. The content of the second part of the dissertation, the analytical one, is the analysis of interviews with the original inhabitants of the monitored countries, the resulting information is related to the facts from the theoretical part and then the individual kitchens are compared with each other. Due to the fulfillment of the secondary goal, it also contains an analysis of a questionnaire survey, which provides an overview of the relationship of Czechs to Asian gastronomy and their preferences. The analytical part answers the set research questions and it reveals the differences of the national cuisines, such as the use of specific types of spices or different consumption, and also finds the relationship of Czechs to Asian gastronomy, which appears to be very positive. The last design part of the bachelor's dissertation includes a summary of these most important results and individual proposals that could help to better understand these different cultures.
