Quality of apples for processing into alcoholic beverages

Abstract:

Tato bakalářská práce je zaměřena na zkoumání obsahových látek odrůd jablek určených pro výrobu nízkoalkoholických nápojů typu cider. Literární část se zabývá botanickou charakteristikou jabloní a současným stavem jejich pěstování v České republice až po odrůdy vhodné pro výrobu cideru. Dále je zde kladen důraz na chemické složení jablek a technologický postup výroby cideru. V praktické části byly analyzovány čtyři odrůdy jablek, které byly vypěstovány na pozemcích Farmy U tří dubů s.r.o., která se nachází ve Stošíkovicích na Louce. Vzorky byly zkoumány z hlediska rozměrů a hmotnosti. Následně byla na plodech měřena pevnost slupky a dužniny. Důraz byl hlavně kladen na stanovení refraktometrické sušiny, titračních kyselin, antioxidační kapacity a obsah polyfenolických sloučenin.

Abstract:

This bachelor thesis focuses on the investigation of the content of apple varieties intended for the production of low-alcohol cider-type beverages. The literature part deals with the botanical characteristics of apple trees and the current state of their cultivation in the Czech Republic up to varieties suitable for cider production. It also focuses on the chemical composition of apples and the technological process of cider production. In the practical part, four apple varieties were analysed which were grown on the land of the Farm U tří oak s.r.o., located in Stošíkovice na Louce. The samples were examined in terms of size and weight. Subsequently, the strength of the skin and flesh was measured on the fruit. Emphasis was mainly placed on the determination of refractometric dry matter, titratable acids, antioxidant capacity and the content of polyphenolic compounds.
