Migration of phthalates from packaging to packaged foods

Abstract:

Cílem této disertační práce bylo analyzovat vybrané potraviny, obaly a plastové misky na obsah dvou esterů kyseliny ftalové DBP (dibutyl-ftalát) a DEHP (di-2-etylhexyl-ftalát). Byla sledována migrace těchto dvou esterů kyseliny ftalové do jogurtů po dobu skladování, do párků do data spotřeby, při tepelné úpravě technologií sous vide do mas, při mikrovlnném záhřevu z plastových misek do simulantů potravin. Estery kyseliny ftalové byly stanoveny na HPLC (vysokoúčinné kapalinové chromatografii). V pokusech byly v potravinách v mnoha případech překročeny hodnoty legislativou stanovené specifické migrační limity (SML), jak pro koncentrace DBP (0,3 mg∙kg-1) tak DEHP (1,5 mg∙kg-1). Ve vzorcích vod vycházely, v případě statisticky významných rozdílů koncentrace DEHP nižší (až na jeden případ) než hygienický limit pro pitnou vodu (0,008 mg∙l-1). Běžným skladováním potravin, stejně tak tepelným opracováním v plastových obalech a nádobách určených pro styk s potravinami, nedochází k rizikovému uvolňování DBP a DEHP do potravin. Větším rizikem se zdá kontaminace surovin či kontaminace při přípravě a manipulaci.

Abstract:

The aim of this dissertation was to analyse selected foods, packaging and plastic bowls to contain two esters of phthalic acid DBP (dibutyl phthalate) and DEHP (di-2-ethylhexyl phthalate). The migration of these two phthalic acid esters was monitored into yogurts during storage, into sausages to the use-by date, during heat treatment with sous vide technology into meats, during microwave heating from plastic bowls to food simulants. Phthalic acid esters were determined by HPLC (high performance liquid chromatography). In the experiments, the specific migration limits (SML) set by legislation were exceeded in many cases in food, both for DBP (0.3 mg∙kg-1) and DEHP (1.5 mg∙kg-1) concentrations. In the cases of statistically significant differences, DEHP concentrations in the water samples were lower (except for one case) than the hygienic limit for drinking water (0.008 mg∙l-1). Common storage of food, as well as heat treatment in plastic packaging and containers intended for contact with food, does not lead to hazardous release of DBP and DEHP into food. Contamination of raw materials or contamination during preparation and handling seems to be a greater risk.
