Diplomová práce je zaměřena na kvalitu fritovacích olejů v různých typech stravovacích zařízení. V teoretické části je popisováno chemické složení olejů, dále výroba fritovacích olejů určených pro fritování. Další část se zabývá vlivem fritovacích olejů na výživu a zdraví člověka. This dissertation is focused on the quality of frying oils used in various kinds of catering devices. In the theoretical part, you can find description of the chemical composition of oils and production of frying oils. The next part solves influence of the frying oils for human nutrition and health.
