Technology of wine production by controlled and spontaneous fermentation

Abstract:

Tato práce se zabývá porovnáním spontánní a řízené fermentace z hlediska analytického a senzorického hodnocení. Výsledky jednoznačně prokazují potenciál jednotlivých metod s odrazem na koncentraci některých významných látek, které v pozitivním či negativním výsledku víno ovlivňují. Tyto závěry se dotýkají zejména spontánní fermentace. Literární část obsahuje základní informace o podmínkách řízené a spontánní fermentace, včetně vlivu autochtonních kvasinek na charakter vína. Jsou zde zmíněny ušlechtilé kvasinky Saccharomyces cerevisiae a Saccharomyces bayanus a jejich pozitivní vliv na víno. Dále práce obsahuje významné parametry ovlivňující průběh celého kvasného procesu. Praktická část práce obsahuje základní údaje ke zpracování hroznů až k vylisované šťávě, následné odkalení a počátky spontánní a řízené fermentace. Během zrání vína na kvasničných kalech sice přišla menší komplikace, ale výsledné víno bylo laboratorně odzkoumáno, byly zjištěny hodnoty významných látek a tyto byly porovnány v rámci spontánní a řízené fermentace. Stejným způsobem bylo provedeno senzorické hodnocení vín s detailem na strukturu a mohutnost vína a jeho aromatický potenciál.

Abstract:

This work deals with the comparison of spontaneous and controlled fermentation from the point of view of analytical and sensory evaluation. The results clearly demonstrate the potential of each method with a reflection on the concentration of some important substances that affect the wine in a positive or negative result. The literature section contains basic information on the conditions of controlled and spontaneous fermentation, including the influence of indigenous yeasts on the character of the wine. Reference is made to the noble yeasts Saccharomyces cerevisiae and Saccharomyces bayanus and their positive effect on wine. Furthermore, the work contains important parameters affecting the course of the whole fermentation process. The practical part of the thesis contains basic data on the processing of grapes to the pressed juice, subsequent racking and the beginnings of spontaneous and controlled fermentation. Although there were minor complications during the maturation of the wine on the lees, the resulting wine was examined in the laboratory, the values of significant substances were determined and these were compared in the context of spontaneous and controlled fermentation. In the same way, a sensory evaluation of the wines was carried out, detailing the structure and robustness of the wine and its aromatic potential.
