The theoretical part of this bachelor thesis includes general findings obtained from epidemiological studies on vitamin C. It describes metabolism, absorption, distribution and excretion of vitamin C. It focuses on resources and deficiency of vitamin C, its bioavailability in a human body and the effect of technological processing of foodstuff on vitamin C.
