Foods for particular nutritional purposes and their usage within the frame of specific dietary systems

Abstract:

Cílem diplomové práce je poskytnout ucelený náhled na problematiku použití potravin pro zvláštní výživu na území České republiky. Práce se zaměřuje na potraviny bez fenylalaninu, potraviny pro diabetiky a potraviny s nízkým obsahem laktózy a bezlaktózové. Popisuje onemocnění a stavy, které vyžadují zařazení těchto potravin do jídelníčku. Praktická část práce hodnotí nutriční parametry a ekonomickou dostupnost vybraných skupin potravin pro zvláštní výživu. Poukazuje tak na současnou situaci pacientů, pro které je použití těchto potravin v rámci stanoveného jídelního režimu žádoucí a vede ke zlepšení jejich zdravotního stavu a kvality života. V rámci praktické části práce byly navrženy a zhodnoceny z nutričního a ekonomického hlediska jídelní lístky sestavené z běžných potravin a jídelní lístky, v nichž je část běžných potravin nahrazena potravinami pro zvláštní výživu. Při sestavování jídelních lístků byl kladen důraz na pestrost a vyváženost stravy a dietní doporučení při daném onemocnění.

Abstract:

The aim of the thesis is to provide a comprehensive view on issue of foods for particular nutritional uses in the Czech Republic. The thesis focuses on foodstuff for phenylketonu-rics, non-lactose foodstuff and diabetic foodstuff and describes disorders and conditions where inclusion of this foodstuff into daily menu is needed. Experimental part of thesis evaluates nutritional value and economic availability of chosen groups of foods for particular nutritional uses. The thesis refers to current state of those patients, for whom is the use of such food necessary, provides desirable results, improves their health and quality of life. Menus compiled of regular foods and menus where normal foods are often replaced by foods for particular nutritional purposes were designed and evaluated from nutritional and economic point of view. The emphasis was put on variety and balance of the diet within the given dietary recommendation for specific disease.
