Creating a spreadsheet application for small businesses in hospitality industry

Abstract:

The theoretical part of my thesis is devoted to the inventory. Described are the methods of goods registering and controls, as well as evaluation of the inventory status. A special section of this chapter looks to the inventory processes in catering facilities as this has its own specifics. The second part aims at proposing weighing of unfinished spirits bottles and conversion of the amounts into a MS Excel spreadsheet as a method allowing streamlining and optimizing of the inventory in pubs. Stocktaking done by using measuring cylinder and paper form is compared to the automated inventory carried out by using a scale and Excel. Efficiency of the system thus formed is verified in terms of accuracy and time consumption. My methodology is based on empirical research and comparison. Laboratory research has found variations related to using graduated cylinder and scales. I detected that weighing of bottles increases the accuracy by 72 % in comparison to measurement in graduated cylinder. To verify time effectiveness, I used studied method for inventory in three centres and the results showed time savings of 81.8 %. The result of my thesis is that I have managed to create an inventory system that performs time and cost effectively and provides simple and practical solution for catering facilities.

Teoretický podklad práce sa venuje priebehu inventarizácie. Popisuje spôsob evidencie tovaru, kontrolné mechanizmy a končí vyhodnotením inventarizačného stavu. Osobitná časť je venovaná priebehu inventúry v gastronomickom zariadení, ktorá má svoje špecifiká. Hlavným cieľom druhej časti práce je zefektívnenie inventúry v pohostinskom zariadení pomocou váženia načatých fliaš destilátov a vytvorenie tabuľkového procesora v MS Excel na tento prepočet. Inventúru, pri ktorej použijeme odmerný valec a papierový formulár, porovnávame s automatizovanou inventúrou za použitia váhy a Excelu. Efektivitu takto vytvoreného systému overujeme z pohľadu presnosti a času. Laboratórnym výskumom zisťujeme odchýlky, ktoré súvisia s použitím odmerného valca a váhy. Zistili sme, že pri vážení načatých fliaš zvýšenie presnosť o 72 % oproti meraniu v odmernom valci. Pre porovnanie úspory času sme vykonali inventúru v 3 strediskách a jej výsledkom bola úspora času o 81,8 %. Použité overovacie metódy boli teda výskum a komparácia. Výsledkom práce je zistenie, že nami vytvorený systém inventúry prináša úsporu času a nákladov a je jednoduchým a praktickým riešením pre pohostinské zariadenia.
