Ethical problems driveway tourism in the field of gastronomy, taking into account the cultural differences of clients

Abstract:

The bachelor thesis focuses on the ethical problems of incoming tourism in gastronomy with cultural differences, especially in Jewish culture. The main objective is to analyze and subsequently evaluate the level of knowledge about the Jewish clientele of both future and current tourism, hotel and gastronomy workers.The work is divided into three parts. In the first, theoretical-methodological part, I define basic notions such as culture, ethics and etiquette and gastronomy that are closely related to the given issue. In the second, analytical part, I will focus on a specific culture, namely the Jewish one. I focus mainly on their traditions, habits and way of their life. Furthermore, I analyze the position of the Jewish clientele in the incoming tourism and also the offer of travel agency services in the Czech Republic. I focus mainly on services for cultural different tourists, in this case Jewish tourists. In this part I also evaluate my primary research, for which I chose the method of questionnaire survey. The aim of this research was to find experience with the Jewish clientele as well as information about the knowledge of Judaism and Jewish culture. The questionnaire was on the students of the hotel college and on the current staff of gastronomy, hospitality and tourism. In the last part of the thesis I try to propose an appropriate solution for the given issue of ethical problems of cultural different clients in the territory of the Czech Republic.

Abstract:

Bakalárska práca je zameraná na etické problémy príjazdového cestovného ruchu v gastronómii s kultúrnymi odlišnosťami, konkrétne u židovskej kultúry. Hlavným cieľom je analyzovať a následne vyhodnotiť úroveň znalostí o židovskej klientele budúcich ale aj súčasných pracovníkov cestovného ruchu, hotelierstva a gastronómie. Práca je rozdelená do troch častí. V tej prvej, teoreticko-metodologickej časti, definujem základné pojmy ako kultúra, etika a etiketa a gastronómia, ktoré úzko súvisia s danou problematikou. V druhej, analytickej časti, sa zameriam na konkrétnu kultúru a to židovskú. Zameriavam sa predovšetkým na ich tradície a zvyky a spôsob života. Ďalej analyzujem postavenie židovskej klientely v príjazdovom cestovnom ruchu a taktiež ponuku služieb cestovných kancelárií v Českej republike. Zameriavam sa hlavne na služby určené pre kultúrne odlišných turistov, v tomto prípade židovských turistov. V tejto časti taktiež vyhodnocujem môj primárny výskum, pre ktorý som zvolila metódu dotazníkového prieskumu. Cieľom tohto výskumu bolo zistiť skúsenosti so židovskou klientelou ale aj informácie o znalostiach judaizmu a židovskej kultúry. Dotazník bol mierený na študentov Vysokej školy hotelovej a na súčasných pracovníkov gastronómie, hotelierstva a cestovného ruchu. V poslednej návrhovej časti sa snažím navrhnúť vhodné riešenie pre danú problematiku etických problémov kultúrne odlišných klientoch na území Českej republiky.
