Abstract:

Abstract BIELIKOVÁ, Veronika. Operation of catering equipment (Restaurant form). [Bachelor’s dissertation]The Institute of Hospitality Management: 2015,s.56 The Bachelor thesis is focused with the operation of catering equipment in Czech restaurants. Text work consists of three parts: theoretical, analytical and stating suggestion. The theoretical part describes the actual in operation equipment accordance with the laws in respect thereto, the marketing mix, as well as the characteristics of the innkeepers devices to trends in gastronomy. The analytical part consists of two parts. The first part assesses the quality of the services visited restaurants with the help of Mystery Guest method. The second part presents the information obtained from the questionnaire. In conclusion, the analytical part of the overall assessment of both the research. The aim of the thesis is to analyze the supply of services to customers in selected catering establishments and in general to see how they affect different aspects of the customer. The design part is based on the information found in the analytical section then provides suggestions and recommendations for restaurant facilities. Conclusion summarizes the different procedures thesis and evaluate hypotheses and personal contribution.

Abstrakt BIELIKOVÁ, Veronika. Prevádzka stravovacieho zariadenia ( Reštauračná forma ). (Bakalárska práca). Vysoká škola hotelová. Praha : 2015 s.56 Bakalárska práca sa zaoberá prevádzkou stravovacieho zariadenia v českých reštauráciách. Text práce sa skladá z troch častí: teoretickej, analytickej a návrhovej. Teoretická časť popisuje samotné zriaďovanie prevádzky podľa zákonov k ním príslušných, marketingový mix, ako aj charakteristiku hostinských zariadení až po trendy gastronómie. Analytická časť je zložená s dvoch častí. Prvá časť hodnotí kvalitu poskytovaných služieb navštívených reštaurácií za pomoci Mystery guest metódy. Druhá časť prezentuje získané informácie z dotazníkového šetrenia. V závere analytickej časti je celkové vyhodnotenie oboch použitých výskumov. Cieľom bakalárskej práce je analyzovať ponuku služieb zákazníkovi vo vybraných stravovacích zariadeniach a vo všeobecnosti zistiť, aký vplyv majú jednotlivé aspekty na zákazníka. Návrhová časť vychádza zo zistených informácií v analytickej časti následne poskytuje návrhy a odporučenia pre reštauračné zariadenia. Záver sumarizuje jednotlivé postupy bakalárskej práce a vyhodnocuje hypotézy a osobný prínos.
