Determination of Volatile Organic Compounds in Alcoholic Beverages

Abstract:

Práce je v prvém kroku věnována stručnému popisu alkoholických nápojů, jejich klasifikaci a přiblížení každého alkoholického nápoje zvlášť z hlediska výroby, použití a účinku na lidské zdraví. Na tyto alkoholické nápoje jsou poté aplikovány analytické metody, které mají stanovit obsah těkavých organických látek, které jsou nositelé typických vlastností nápojů, jako je například chuť, aroma.

Abstract:

The work is the first step devoted to a brief description of alcoholic beverages, their classification and approach each of them separately from the production, use, effect on human health. These alcoholic beverages are then applied analytical methods to determine the content of volatile organic compounds which are carriers of typical characteristics of beverages such as flavor, aroma.
