Business model analysis of a Caucasian cuisine restaurant

Abstract:

Cílem bakalářské práce je analyzovat business model pěti kavkazských restaurací v Praze. První část práce tvoří teoretická část, která přináší informace o různých business modelech, současných trendech v nákupním chování a historický odkaz na kulturu a kuchyni Arménie a Gruzie. Na teoretickou část navazuje praktická, jejímž cílem je shromáždit informace o struktuře business modelu vybraných restaurací. Jako výzkumná metoda byla zvolen polostrukturovaný hloubkový rozhovor. Výzkumu se zúčastnilo šest respondentů, z nichž pět zastupovalo arménské restaurace a jeden gruzínskou restauraci. Výsledkem analýzy byl podnikatelský plán arménské restaurace, který vycházel z teoretické části i ze zjištění z rozhovorů.

Abstract:

This work aims to analyse the business model of 5 Caucasian restaurants in Prague. The first part of the paper is a theoretical part that presents information about different business models, current trends in purchasing behaviour and a historical reference to the culture and cuisine of Armenia and Georgia. The second stage is followed by the practical part, which aims to collect information about the structure of the business model of the selected restaurants. The semi-structured in-depth interview method was chosen as the research method. Six respondents took part in the study, five of them representing Armenian restaurants and one Georgian restaurant. The outcome of the analysis was a business model for an Armenian restaurant based on the theoretical part as well as on the findings from the interviews.
