Determination of Mineral and Trace Elements in Non-Traditional Raw Materials for Cereal Mixtures

Abstract:

Diplomová práce se zabývá stanovením vybraných minerálních prvků v netradičních suro-vinách přidávaných do cereálních směsí. V teoretické části je popsáno netradiční složení cereálních směsí se zaměřením na neobilné mouky, jedlé květy, jednotlivé druhy vlákniny, izoláty proteinů a na lišejník islandský. Teoretická část se dále zabývá popisem vybraných minerálních prvků, a to zejména toxických pro člověka. Dále se práce zabývá metodami, kterými byly prvky stanoveny. Praktická část se skládá z popisu konkrétních vzorků, jejich přípravy a následného stanovení Cd, Al a Sn metodou AAS. Stanovení Hg bylo provedeno na analyzátoru AMA 254.

Abstract:

Diploma thesis deals with the determination of selected trace elements in non-traditional raw materials adding to cereal mixtures. The theoretical part describes the non-traditional composition of cereal mixtures with a focus on non-cereal flours, edible flowers, types of fiber, protein isolates and Iceland lichen. The theoretical part also deals with the description of selected trace elements, especially toxic to humans. Furthermore, the work deals with the methods by which the elements were determined. The practical part consists of a description of specific samples, their preparation and subsequent determination of Cd, Al and Sn by AAS method. The Hg determination was performed on an AMA 254 analyzer.
