Diplomová práce je zaměřena na masné výrobky, konkrétně na Špekáček. Teoretická část pojednává o rozdělení masných výrobků, požadavky na jejich kvalitu a jsou popsány konkrétní suroviny používané v masném průmyslu. V práci jsou popsány i jednotlivé fáze jejich výroby.
