Using selected natural alternatives to sulfur dioxide in wine production

Abstract:

Tato práce se zaměřuje na zkoumání potenciálních přírodních alternativ k použití oxidu siřičitého (SO2) při výrobě vína, s důrazem na jejich antioxidační účinky. Cílem studie je reagovat na rostoucí zájem o přírodní alternativy, které by mohly nahradit nebo snížit použití SO2 vzhledem k jeho potenciálně negativním účinkům na lidské zdraví. Práce zahrnuje literární rešerši zahrnující význam oxidu siřičitého v prostředí vína, historii jeho využití, legislativní omezení, známé technologické postupy a přírodní aditiva umožňující snížení dávkování přidaného oxidu siřičitého. Dále pak v praktické části vinifikaci experimentálních vzorků vína s použitím vybraných přírodních alternativ. Konkrétně se jedná o semena kapary trnité (Capparis spinosa L.), sušené plody lichořeřišnice větší (Tropaeolum majus L.) a sušený květ řebříčku obecného (Achillea millefolium L.). Výsledky senzorických analýz podporují možnosti využití vybraných přírodních alternativ, avšak chemická analýza neukázala významný vliv na látkové složení vína. Je nutné provést další chemické analýzy a experimenty pro lepší pochopení antioxidačních účinků použitých alternativ a jejich dopadu na látkové složení vína.

Abstract:

This study focuses on the investigation of potential natural alternatives to the use of sulfur dioxide (SO2) in wine production, with an emphasis on their antioxidant effects. The aim of the study is to respond to the growing interest in natural alternatives that could replace or reduce the use of SO2 due to its potentially negative effects on human health. The work includes a literature review covering the significance of sulfur dioxide in the wine environment, its historical use, legislative restrictions, known technological processes, and natural additives that allow for a reduction in the dosage of added sulfur dioxide. Furthermore, the practical part involves the vinification of experimental wine samples using selected natural alternatives. Specifically, these are caper spiny seeds (Capparis spinosa L.), dried fruits of nasturtium (Tropaeolum majus L.), and dried flowers of common yarrow (Achillea millefolium L.). The results of sensory analyses support the possibilities of using selected natural alternatives, but chemical analysis did not show a significant effect on the material composition of the wine. It is necessary to perform additional chemical analyses and experiments for a better understanding of the antioxidant effects of the used alternatives and their impact on the material composition of the wine.
