Analysis of the Glasses Used in the Present Beverage Gastronomy

Abstract:

Thesis is devoted to the analysis of wine glasses, which aims to create a comprehensive view of the architecture and the importance of individual parameters of wine goblets and their functionality, presence and importance in the present beverage gastronomy. The whole theme of the work is appropriately and sufficiently theoretically substantiated. According to theoretical knowledge and the results of further analysis has to give an opinion to the importance of the use of glasses of wine in quantities necessary for an individual enjoy of different wines. The work is divided into three main parts. The first is the theoretical part, which contains the theoretical foundation for the whole issue, from the history and production of wine crossing cup, its architecture and function of their parameters, to the range of the jar for wine divided by style. Another theoretical explanation deals with the factors that affect the experience of wine, usually by the human sense and the right temperature of the wine. In the analytical part is a survey of selected glasses of wine through sensory analysis and the actual results. The survey is evaluated based on the scoring tables and observations, which took place during the tasting. The results are evaluated on the basis of the points and verbal evaluation of sensory analysis through graphs and tables. The last part corresponds to the hypothesis of the work, the importance of proper glass is reflected in the quality, which is based on sensory analysis.

Abstract:

Bakalárska práca je venovaná analýze vínových pohárov, ktorej cieľom je vytvorenie uceleného pohľadu na architektúru a dôležitosť jednotlivých parametrov vínových pohárov ich funkčnosť, zastúpenie a význam v súčasnej nápojovej gastronómii. Celú tematiku má práca vhodne a dostatočne teoreticky podložiť. Zo získaných teoretických znalostí a výsledkov analýzy má ďalej zaujať stanovisko k dôležitosti využívania vínových pohárov a k ich množstvu potrebného pre jednotlivca na vychutnanie rôznych vín. Práca je rozdelená do troch hlavných časti. Prvá je teoretická časť, ktorá obsahuje teoretické základy pre celú problematiku, od histórie a výroby vínových pohárov cez ich architektúru a funkciu ich parametrov až po sortiment pohárov na vína rozdelené podľa štýlu. Ďalší teoretický výklad sa zaoberá faktormi, ktoré ovplyvňujú zážitok z vína, spravidla ľudským zmyslom a správnej teplote vína. V analytickej časti sa nachádza prieskum vybraných pohárov prostredníctvom senzorickej analýzy vína a samotné výsledky. Prieskum je vyhodnotený na základe bodovacích tabuliek a pozorovania, ktorý prebiehal počas degustácie. Výsledky sú vyhodnocované na základe bodového a slovného hodnotenia senzorickej analýzy prostredníctvom grafov a tabuliek. Posledná časť odpovedá na hypotézu práce, význam správneho pohára sa prejaví v kvalite, ktorá vychádza zo senzorickej analýzy.
