Abstract:

Diplomová práce se zabývá problematikou přídatných látek přidávaných do potravin na zdraví člověka, který začal být velikým problémem v dnešní době. Pokouším se popsat, jak je důležité věnovat pozornost potravinářským výrobkům a důkladně se zabývat jejich složením. V první části diplomové práce, je pomocí odborné literatury detailně popsána historie konzervantů, jejich značení, podmínky použití, aditivní skupiny, povolené přídatné látky a jejich klady a zápory na zdraví člověka. Dále se zde dozvíte o civilizačních chorobách a potravinách, které se nepovažují za přídatné látky. Důležitá a neopomenutelná část diplomové práce byla zpracována pomocí výzkumu konveniencí prodávaných v České republice a dotazníkového výzkumu na který odpovídala široká veřejnost a studenti Vysoké školy hotelové. Výsledky dotazníku, jsou sestaveny pomocí tabulek a grafů, které znázorňují odpovědi daného výzkumu. Cílem této práce je pomoci orientovat se mezi přídatnými látkami. Závěr práce se zabývá celkovým shrnutím a poznatky problematiky potravinářských přídatných látek na zdraví člověka.

Abstract:

This diploma thesis addresses the issue of food additives and their impact on human health, which has recently come to be recognized as a major problem. I attempt to show the importance of paying greater attention to food industry products and carefully examining the ingredients of which they are composed. In the first part of my thesis, I draw upon the academic literature to provide a detailed history of preservatives, their labeling, usage restrictions, categories of additives, permitted additives, and their positive and negative aspects in terms of human health. This part also provides insight into diseases of civilization, and into comestible goods which are not considered additives. A crucial section without which this thesis would be incomplete is based on a survey of convenience foods sold in the Czech Republic and questionnaire research conducted among the general public and among students of the College of Hospitality Management. The results are presented in the form of charts and graphs illustrating the answers attained by the survey. The objective of this thesis is to foster a better understanding of food additives. A final part is devoted to an overall summary of the findings related to the issue of food additives and their impact on human health.
