Monitoring the Quality of Gastronomy Services in the Hotel

Abstract:

Hlavním cílem mé bakalářské práce na téma Sledování kvality gastronomických služeb v hotelu je provést analýzu kvality gastronomických služeb v hotelu Lymberia na Rhodosu a navrhnout případná opatření směřující ke zlepšení kvality poskytovaných gastronomických služeb. V zájmu naplnění tohoto cíle jsem postupovala podle níže uvedeného postupu. Teoreticko-metodologická část se zabývá problematikou hotelu, jeho organizační strukturou a klasifikací ubytovacích zařízení. Dále charakteristikou gastronomických služeb a popisem činností s tím spojených. Ve třetí kapitole teoreticko-metodologické části jsou přiblíženy činnosti zaměřené na řízení kvality gastronomických služeb. Obsahem analytické části je charakteristika hotelu Lymberia a jeho organizační struktura včetně popisu jednotlivých úseků a vedoucích pozic. Ve druhé kapitole analytické části jsem se zaměřila na stravovací úsek a provedla jeho podrobnou analýzu. Dále jsem uvedla vlastní názor na kvalitu poskytovaných gastronomických služeb na základě výkonu mé letní praxe v hotelu Lymberia. Vyhodnotila jsem dotazník a recenze z webových portálů na hotel Lymberia. Recenze jsem čerpala z internetových stránek Tripadvisor.cz, Booking.com a Facebook.com. V závěru jsem dotazník porovnala s recenzemi a uvedla nejčastější kladná a záporná hodnocení. V návrhové části se zabývám návrhy na zlepšení kvality gastronomických služeb v hotelu Lymberia. Na základě zjištěných nedostatků získaných provedením analýzy jsem navrhla nápravná opatření v oblasti standardů kvality, převážně norem pro pracovníky, dále v oblasti orientace na zaměstnance, snídaňové nabídky a sledování spokojenosti zákazníka.

Abstract:

The main aim of my thesis on the topic Monitoring the Quality of Gastronomy Services in the Hotel is to analyze the quality of gastronomy services in the Lymberia hotel on Rhodes and suggest measures to improve the quality of provided gastronomy services. In order to achieve this goal, I proceeded as described below. The theoretical-methodological part deals with the hotel, its organizational structure and classification of accommodation facilities, characteristics of gastronomy services, and a description of related activities. The third chapter of theoretical and methodological part presents activities aimed at quality management of catering services. The analytical part describes the Lymberia hotel and its organizational structure, including a description of the individual segments and leadership positions. In the second chapter I focused on gastronomy section and made its detailed analysis. Then I introduced my own opinion on the quality of gastronomic services on the basis of my summer practice at the Lymberia hotel. I evaluated a questionnaire and reviews of web portals. I gathered reviews from websites Tripadvisor.cz, Booking.com and Facebook.com. At the end I compare a questionnaire and reviews and write out the most frequent positive and negative assessments. Proposal part deals with suggestions to improve quality of gastronomy services in the Lymberia hotel. By deficiencies obtained by performing analysis, I propose corrective measures in the field of quality standards, primarily standards for workers, as well as in the field of employee involvement, the breakfast menu and monitoring a customer satisfaction.
