Abstract:
Tato diplomová práce se v první části zaměřuje na technologický postup výroby medovin. Dále popisuje složení medu a medovin a možnosti analýzy. Ve druhé části je popsáno stanovení 5-hydroxymethylfurfuralu, fruktosy, glukosy a organických kyselin.Abstract:
This thesis cotains the technical way of mead and honey production in first part. The second part is about setting 5-hydroxymethylfurfural, fructose, glucose, organic acids in mead and honey.
