Abstract:
Tato práce předkládá charakteristiku základních složek vína. Jednotlivé sloučeniny jsou popsány z chemického a senzorického pohledu. Množství a vzájemné poměry jednotlivých složek vína rozhodují o organoleptických vlastnostech vína. I to je jedním z důvodů, proč kvantifikovat obsah vybraných sloučenin. This thesis submits characteristics of primary ingredients of wine. Individual compounds are described both from chemical and sensory point of view.Amount and reciprocal ratios of individual ingredients of wine decide on organoleptic qualities of wine.
