Possibilities of technological processing lesser known fruit species
Abstract:
Cílem práce bylo teoreticky popsat vybrané méně známé druhy ovoce (aronie, jeřáb a dřín) a možnosti jejich technologického zpracování. V praktické části práce u vybraných plodů bylo provedeno měření fyzikálně-chemických parametrů. Následně bylo ovoce konzervárensky zpracováno na džemy a kompoty. Abstract:
The aim of the thesis was to theoretically describe selected types of fruit (chokeberry, rowan and cornelian cherry) and the possibilities of their technological processing. In the practical part of the work, physico-chemical parameters were measured for selected fruits. Then the fruit was processed into jams and compotes.
