Abstract:
Tato diplomová práce se zabývá solí v technologii přípravy pokrmů. Teoretická část popisuje základní vlastnosti soli, její úlohu v lidském organismu, důsledky jejího nadbytku a nedostatku a také vliv dlouhodobého a nadměrného přívodu soli na lidské zdraví. This diploma thesis deals with salt in food preparation technology. The theoretical part describes the basic properties of salt, its role in the human organism, the consequences of sodium abundance and deficiency and the influence of excessive long-term salt intake on human health.
