Coffee substitutes - characterization and effect on human health

Abstract:

Bakalářská práce se zaměřuje na charakteristiku alternativ ke klasické kávě, konkrétně na kávoviny vyrobené z různých rostlinných surovin, jako jsou čekanka, ječmen, kořen pampelišky a další. Cílem práce je tyto náhražky kávy popsat a vzájemně porovnat z hlediska chemického složení, senzorických vlastností a vlivu na lidské zdraví. Součástí studie je také hodnocení senzorických vlastností a spotřebitelských preferencí jednotlivých produktů. Výsledky práce by měly přispět k lepšímu porozumění výhodám a nevýhodám těchto alternativ, a to nejen z hlediska chuti, ale i vlivu na lidské zdraví.

Abstract:

The bachelor thesis focusses on the characterisation of alternatives to traditional coffee, specifically coffee substitutes made from various plant-based ingredients such as chicory, barley, dandelion root, and others. The aim of this thesis is to describe these coffee alternatives and compare them in terms of chemical composition, sensory properties, and their effects on human health. The study also includes an evaluation of the sensory qualities and consumer preferences of individual products. The results of this thesis should contribute to a better understanding of the advantages and disadvantages of these alternatives, not only in terms of taste, but also in relation to their impact on human health.
