Diplomová práce je zaměřena na sledování vlivu skladování a tepelného zpracování na kvalitu brambor. První část je věnována stručnému souhrnu chemických vlastností brambor, popisu vybraných bramborových odrůd, vlastnostem škrobu a sacharidů obsažených v bramborových hlízách. The thesis is focused on monitoring the impact of storage and heat treatment on the quality of potatoes. The first part is devoted to a brief summary of the chemical qualities of potato, a description of selected potato varieties, the characteristics of starch and saccharides contained in potato tubers.
