The Determination of Carbon Dioxide Loss of Soft Drinks in Relation to the Used Packaging Material

Abstract:

Cílem diplomové práce bylo zjištění úbytku oxidu uhličitého v sycených nealkoholických nápojích během 24 týdenního skladování (22°C ? 2°C). Obsah oxidu uhličitého byl sledován v nápojích balených ve třech různých obalech, v PET lahvi, ve skleněné lahvi a v hliníkové plechovce. Měření bylo provedeno na začátku experimentu (týden 0) a následně v intervalech po 1, 2, 3, 4, 8, 12, 16, 20 a 24 týdnech. Stanovení oxidu uhličitého bylo pro-vedeno pomoci dvou metod, manometrické metody a metody multinásobné objemové ex-panze. V experimentální části byl pozorován úbytek oxidu uhličitého v průběhu skladování a v závislosti na použitém obalovém materiálu, kdy nejvýraznější úbytek byl pozorován u nápoje v PET lahvi. Úbytek sycení byl pozorován i u nápoje ve skleněné lahvi, nicméně byl v porovnání s úbytkem v PET lahvi mnohem nižší. Nápoj v hliníkové plechovce nevykazo-val žádnou ztrátu sycení. Odchylky použitých metod pro stanovení oxidu uhličitého v nápoji byly minimální.

Abstract:

The aim of this thesis was to determine the loss of carbon dioxide in carbonated soft drinks during a 24-week storage period (22°C ? 2°C). The carbon dioxide content was examined in beverages packaged in three different packaging material containers, PET bottles, glass bottles and aluminum cans. Moreover, the measurements were realised at the beginning of the experiment (0 week) and at intervals of 1, 2, 3, 4, 8, 12, 16, 20 and 24 weeks. The de-termination of carbon dioxide was performed using two methods; the manometric method and the method of multiple volume expansion. During the proces of the experiment was observed a significant loss of carbon dioxide con-tent in dependance on the packaging material used. The most significant loss of saturation was observed in the sample which was stored in the PET bottle. Furthermore, carbonation loss was also observed in the beverage stored in the glass bottle. However, the loss in car-bon dioxide content was much lower in comparison to that which was observed in the samples stored in PET bottles. The sample stored in the aluminum can did not exhibit any loss in carbon dioxide content. Finally, the deviations of the methods used were minimal in order to determine the carbon dioxide content in the beverages.
